Anantara celebrates 25 years with culinary experiences

 

The Anantara Hotels & Resorts group is marking 25 years with a selection of signature culinary experiences. 

The options range from Sri Lanka’s spice trails to the rice fields of Vietnam. 

The feasts will celebrate the quarter of a century since the brand was founded in Thailand as the experiential luxury brand of Minor Hotels

Across three Asian destinations – Sri Lanka, Thailand and Vietnam – the brand responds to what the Minor Hotels Travel Trends Report 2026 confirms: food is the primary gateway to culture for most travellers.

At Anantara Peace Haven Tangalle Resort on the south coast of Sri Lanka, Mama’s Kitchen explores local culinary secrets and village cooking culture with the resort’s local mama. 

Guests participate in the preparation, hand-grinding spices and stewing slow-cooked curries, in the kamatha kitchen situated in the resort’s paddy field, learning the role each ingredient plays and the stories that accompany them.

At sister property Anantara Kalutara Resort, guests partner with the resort’s culinary team for the '25 Spices Table', an exploration of 25 indigenous herbs and spices, each used in the preparation of traditional local curries and each with an intriguing history. 

At Anantara Siam Bangkok Hotel, executive chef Punn Akkawin teaches guests how to create Thai dishes full of colour and flavour. The experience begins with a morning market visit to select the fresh produce and aromatics that will define the meal. Guests return to The Spice Market, a Bangkok institution with more than 40 years of history in the Thai capital, to prepare three dishes under the chef’s guidance to enjoy for lunch.

In Vietnam, rice is central to culture. Anantara Quy Nhon Villas takes guests into the countryside to meet the families who keep centuries-old traditions alive. 

The first stop is a family where rice paper making is still practised by hand. Here, guests can learn each delicate step of the process, demonstrated and shared. This continues with a visit to a second family for a tasting of traditional rice wine. The experience closes back at the resort, where guests create their own rice wine cocktails while overlooking the ocean.

The route between Quy Nhon and Hoi An is an experience in its own right. The Vietage by Anantara train connects the two destinations in style, with locally sourced provisions on board, such as strawberries from Đà Lạt, regional teas and locally produced gins that reflect the landscape en route.

At Anantara Hoi An Resort, the Taste of Hoi An street food experience carries the narrative forward through the dishes that define the town.

Sunshine Coast welcomes new international hotel


Tourism continues to boom on the Sunshine Coast.

Avani Mooloolaba Beach Hotel opened its doors this week, marking the arrival of the first internationally branded new-build hotel in the region in more than four decades.

The opening signals a new phase for Mooloolaba, as growing domestic and international demand reshapes one of Australia’s most established coastal destinations.

Positioned on Mooloolaba Esplanade overlooking the Pacific Ocean, the 180-room hotel features open social spaces. 

Scott Wright, the hotel GM, said the opening marks the culmination of a long-term vision to elevate the Sunshine Coast experience.

“We are thrilled to welcome our first guests and deliver on our promise to bring a new level of accommodation and dining to the Sunshine Coast,” Wright said.

“Our team is ready to help guests settle in, explore the hotel and experience everything this destination has to offer.”

Dining experiences are headed by Sully’s Rooftop, the hotel’s signature restaurant under executive chef Marky Godbeer. There is also the Lobby Bar at street level. 

The timing aligns with broader investment across the region. The Mooloolaba Foreshore Revitalisation Project is set to enhance the beachfront with expanded parkland and improved access, while the $170 million redevelopment of Sunshine Coast Airport will strengthen connectivity from key domestic and international markets including Sydney, Melbourne, Adelaide, Auckland, Denpasar and Singapore.

Opening rates start from $319 per night, based on two adults sharing a deluxe king room on a bed and breakfast basis, inclusive of taxes and service charge.

Minor Hotels plans major Sydney expansion



The fast-growing Minor Hotels group is to add two new properties in Sydney under its NH brands.

The expansion will grow the Bangkok-based group’s Australasian portfolio to more than 60 properties.

“As Australia’s number one destination for domestic and international travellers, New South Wales continues to demonstrate strong tourism momentum, with total visitor expenditure up 5.7% year-on-year,” said Craig Hooley, Chief Operating Officer for Minor Hotels Australasia.

“This growth is supported not only by increasing leisure and business travel, but also by the state’s vibrant calendar of events and major international touring, which continue to shape demand for hotel stays and experiences.

“Events are re-shaping demand patterns across New South Wales.

“Major live entertainment has become a key driver of both occupancy and room rates, with concert-led periods delivering around 20% higher average daily rates compared to non-concert periods. International touring is now a consistent growth lever: since the Taylor Swift benchmark, we’ve seen a sustained flow of global artists driving meaningful room-night contribution year-round.

Minor Hotels will open NH Collection Sydney, marking the arrival of the brand in Australia.

The 256-room "upper-upscale" hotel in central Sydney is designed to cater to domestic and international travellers seeking "an eclectic, elegant atmosphere and outstanding service".

Featuring two restaurants and a rooftop bar, the property is set to open in late 2026.

Minor Hotels will also introduce its first NH Hotels property in Australia with NH Sydney Airport (top image), scheduled to open in 2027 in Mascot.

Truly weirdly, this development will also feature the reintroduction of the Sizzler restaurant brand to Australia through a partnership between Minor Hotels and Minor Food.

And here we all thought Sizzler died sometime last century.

New international hotel brand to launch in New York

A new international hotel brand - Wolseley Hotels - will launch in New York City in early 2027.

The Wolseley Hotel New York will mark the brand’s first hotel worldwide and establish New York as the flagship destination for The Wolseley Hotels, while also bringing one of London’s most celebrated dining institutions to an international stage.

Located steps from Bryant Park in Midtown Manhattan, The Wolseley Hotel New York will also introduce The Wolseley restaurant and bar to the United States for the first time, bringing one of London’s most celebrated dining institutions to an international stage.

The hotel will occupy a landmark building at 130 West 44th Street, originally constructed in 1905 as the clubhouse for The Lambs Club, a social club for those involved in the arts. 

The property will aim to blend "British sophistication with New York’s cultural energy and architectural pedigree". 

The new hotel will have 76 guest rooms and suites and deliver "an effortless, contemporary luxury experience".

Complementing the restaurant will be an intimate cellar-level speakeasy bar. 

The New York flagship will see future properties planned for some of the world’s most cosmopolitan cities across Europe, North America, Asia, and the Middle East, owner Minor Hotels says.

Anantara hotel brand to make Australian debut in Perth


Anantara, a leading high-end hotel brand in Asia, is set to make its Australian debut in Perth, the capital of Western Australia. 

Minor Hotels, the hotel brand owner and operator, this week signed up for the Anantara Perth Hotel in the Burswood Point precinct.
 
The expansion will bringing Anantara’s Thai-inspired hospitality to one of Australia’s fastest‑growing capital cities.

The hotel will anchor the $3.8 billion Burswood Point development, which will open in 2032. 

Anantara Perth will become a flagship destination on the Swan River waterfront with the new-build. property to be developed by Golden Sedayu, a partnership between Perth’s Golden Group and Agung Sedayu, one of Indonesia’s leading property developers. 

The hotel will have 150 contemporary guest rooms and suites, two destination restaurants, a swimming pool, fitness centre and an Anantara Spa.

New international hotel unveiled for Wollongong




Wollongong, a thriving city south of Sydney, is set to get a new international hotel courtesy of Asian-based group Minor Hotels. 
 
Minor Hotels will introduce its Avani Hotels & Resorts brand to Wollongong with the opening of Avani Wollongong Hotel in 2027, marking Avani’s first new-build property in New South Wales.
 
Located near transport links, the CBD and the city beach, the hotel will offer "contemporary rooms, locally inspired dining and flexible event space".

The new hotel sits close to Wollongong’s central transport hub, CBD and city beach. 

Avani Wollongong will also anchor a major mixed-use development by local developer Blaq Property Group, designed to leverage off the city’s growth. 

Minor Hotels has worked closely with Destination Wollongong to ensure the hotel aligns with the region’s long-term tourism strategy and supports major events.

“Having an internationally recognised brand commit its name and expertise here is a genuine vote of confidence in Wollongong’s trajectory," says Destination Wollongong CEO Jeremy Wilshire. 

"It also marks an early step towards the NSW Government’s goal of delivering an additional 40,400 hotel rooms by 2035, and Wollongong is well placed to be a key contributor.”

Blaq Property Group has made application to increase the number of guest rooms from 107 to 140, which is currently under assessment.

Roads less travelled proving a Thai drawcard

While many travellers are familiar with the diverse attractions of Bangkok, Phuket, Koh Samui and the dubious charms of Pattaya, other visitors to Thailand are looking for less familiar destinations. 

Minor Hotels, a global hospitality group with hotels, resorts and branded residences across 59 countries, is banking on the growing appal of Hua Hun, with the opening of NH Hua Hin in Thailand’s royal seaside town.

The property, formerly the Dusit D2, features 152 rooms and suites with city and mountain views with options for both leisure and business guests. 

Guests can enjoy the hotel's three food and beverage outlets: an all-day dining restaurant serving international favourites and local specialities, a lobby café offering light bites and drinks throughout the day, and a rooftop bar by the infinity pool with sunset views.

New report show travellers are taking new directions



What direction is travel headed in 2026?

Booming hotel group Minor Hotels says travellers are re-thinking how they move through the world, seeking multi-dimensional experiences that resonate emotionally, relationally and spiritually.

The new report released this week, the inaugural Minor Hotels Travel Trends Report, explores various dimensions of connection that illustrate the shift for hotels from simply delivering service to helping guests find meaning through their journeys.

“Today’s travellers want more than destinations, they want stories, connections and meaning," says Dillip Rajakarier, Group CEO of Minor International, parent company of Minor Hotels.

"Our trend report reveals a growing appetite for authentic engagement and conscious travel choices.

"For Minor Hotels, this is an invitation to continue shaping experiences that prioritise wellbeing and cultural depth, ensuring every journey offers something truly memorable.

"Despite ongoing economic uncertainty, the report finds that people continue to prioritise travel in the year ahead. The outlook for 2026 is overwhelmingly positive, with 94% of respondents expecting to travel as much or more in the coming year, with one-third planning more trips than in 2025.

"Ninety-four % plan to spend the same or more on travel in 2026, with almost half (47%) intending to increase their travel budgets. Luxury travellers are nearly twice as likely to travel more in 2026 compared to all respondents, with 61% expecting an increase in frequency."

The report says travellers are prioritising quality over quantity, seeking experiences that deliver personal value rather than simply more trips. While travellers remain optimistic for the year ahead, affordability remains a leading factor shaping plans for 53% of respondents, followed by seasonality (42%), ease of travel (40%) and time (40%).

Over half of respondents (53%) book their travel within three months of departure, showing a willingness to clear their schedule at short notice or to wait for greater clarity amidst ongoing uncertainty.

Hotel websites dominate as the most utilised planning tool for 80% of travellers, ahead of personal recommendations (35%) and online travel agents (29%). At the same time, emerging technologies, such as generative AI chatbots, are now used by 12%. Heaven help us all.

Even on group journeys, travellers are carving out space for solitude and nature to recharge with 71% of respondents agree that taking a break from technology, social media or work during their travel is important for their personal wellbeing.

"Forty-four percent plan to integrate more wellness or mindfulness - although I'm betting some of them have no idea what mindfulness is - rising to 73% among those already engaged in wellness practices. Spa treatments lead as the top-choice activity (75%), followed by nature-based experiences (59%) and fitness (49%).

Culture is discovered through flavour, with food the primary gateway for 85% of travellers, followed by historic architecture (71%) and nature (65%). Not so sure about all that love of architecture, either.

New Sunshine Coast hotel a shot in the arm for local tourism

 

The Sunshine Coast in Queensland is set to welcome its first international new-build hotel for four decades.

Minor Hotels, a global hospitality group with hotels, resorts and branded residences across 59 countries, this week advised that Avani Mooloolaba Beach Hotel is on track to open in April 2026,

Developed, owned and operated by KPAT Hotels under a franchise agreement with Minor Hotels, the 12-storey, 180-key property is promising to "set a new benchmark for premium coastal hospitality in one of Australia’s fastest-growing regions".

"Avani Mooloolaba Beach Hotel represents a key milestone for Minor Hotels Australasia,” said Craig Hooley, Chief Operating Officer of Minor Hotels Australasia.

The hotel sits just 100 metres from Mooloolaba Beach - which is currently undergoing a major foreshore revitalisation with expanded parkland, enhanced access and new community spaces. 

Sunshine Coast Airport is only 15 minutes away, with key attractions such as Australia Zoo within a 30-minute drive.

The property features spacious rooms and one-bedroom suites ranging from 27 to 45 sqm, many of which offer interconnecting options, making them ideal for families and groups.

Hotel group goes large with four new brands

 

I can’t think of anything the world needs less of than more new hotel brands.

Minor Hotels, a leading global hotel owner and operator with more than 560 properties across 57 countries, disagrees.

Minor this week announced the strategic expansion of its brand portfolio with the addition of four new hotel brands, including the group’s first “soft” brands.

It says the newly launched brands will support Minor Hotels’ continued growth by enabling it to expand into new markets and provide distinctive hospitality offerings across the luxury, premium and select segments.

Soft brands are a hybrid between independent hotels and core-branded properties.  

The new brands include:

The Wolseley Hotels: a luxury brand that will blend British elegance with European flair and global influence. The aim is to create "elegant, immersive spaces that hum with the rhythm of cosmopolitan life".

Minor Reserve Collection: A "luxury soft" brand, Minor Reserve Collection is designed for travellers who seek "thoughtful, tailored stays that balance innovation and time-honoured hospitality".

Colbert Collection: A "soft" brand in the premium segment, will be aimed at those with a passion for "culinary excellence and genuine social connections". 

iStay Hotels: Will offer stays that are "fun and affordable, comfortable and convenient, delivered with minimal fuss". 

These brands join Minor Hotels’ existing portfolio of hotel brands - Anantara, Elewana Collection, Tivoli, NH Collection, Avani, nhow, NH and Oaks.

Minor Hotels makes major changes to its Oaks brand

Minor Hotels has announced a change of direction for its Oaks brand, which will shift away from serviced apartments to become a full-service hotel, resorts and suites.

An updated brand identity will be rolled out across existing properties and new acquisitions in Australia and New Zealand, including a refreshed food and beverage concept.

"The strategic shift will bring the full-service hotel and resorts experience to life, and will include mixed-use applications in property common areas," Minor Hotels announced.

Grab-and-go pantries stocked with travel essentials, local produce and branded merchandise will offer convenience while lobbies will serve barista-made coffee and freshly baked goods.

There will a focus on ‘family-style’ communal dining and a signature, gourmet lamington unique to each location.

Elevated bathroom amenities will feature a new signature scent of citrus, lavender, and eucalyptus.

The new brand identity will feature a new logo and colours palette, with vibrant yellow and signature Oaks stripe.

The White Lotus effect proves a big hit for hotel group



'The White Lotus effect' is in full bloom for the three Anantara properties that star in the hit TV series. 

Anantara Lawana Koh Samui ResortAnantara Bophut Koh Samui Resort and Anantara Mai Khao Phuket Villas have all experienced a surge in online interest and bookings, the Minor Hotels group reports. 

The Netflix show’s third season, which is set in Thailand and premiered on February 16, has driven a substantial uptick in interest in the three resorts, where much of the series was filmed. 

Traffic to the resorts’ websites has risen 104% year-over-year for the month of February, with the three properties also reporting a 41% rise in direct online bookings made in the same period.

Notable spikes in booking conversion were recorded on February 17 and February 24 - corresponding with the airing of the show’s first two episodes. 

Week-over-week data also shows a 100% increase in search traffic on the Anantara internet booking engine for the three properties compared to those same weeks last year.

Minor Hotels makes major progress


At a time when many hotel industry businesses are struggling, other operators are still reporting positive figures. 

The Minor Hotels group has just posted its strongest full-year results on record, reporting a 16% jump in net profit and a 9% rise in total revenue for 2024.

The record-breaking numbers for the Thai-based business underscore heightened global tourism demand, particularly in the group's home market, as well as in Europe where it operates over 280 properties.

The global hotel owner and operator, which has a portfolio of more than 560 properties in 58 countries, ended the year on a strong note with fourth-quarter profit of THB 2.2 billion (102 million AUD), representing a 14% year-on-year increase.

The results reflected what the group said was disciplined pricing strategy, strong operating leverage, and continued expansion under the group’s ‘asset-right’ strategy – a deliberate balance between asset-heavy and asset-light models – while setting the stage for further gains in 2025.

In 2024, Minor Hotels’ group-wide occupancy reached 68%, marking a two percentage-point uptick from the previous year, with Thailand leading the way with a five-point gain to 70%. 

Average daily rate (ADR) across the global portfolio also rose 6% year-on-year, while revenue per available room (RevPar) climbed 9% overall.

The group’s portfolio in Thailand, where it has 30 properties, was a standout performer with a 17% RevPar increase driven by expanded airline routes and targeted marketing efforts, which attracted high-spending travellers from North America, Asia, Europe, and the Middle East.

“Minor Hotels is well positioned to capitalise on the ongoing global travel rebound and accelerate growth in 2025 and beyond,” said Dillip Rajakarier, CEO of Minor Hotels and Group CEO of Minor International. 

“Our asset-right strategy and disciplined financial management will continue to drive growth and create value for our stakeholders. Minor Hotels makes a major investment in Japan



Fast-growing hospitality group Minor Hotels International is set to enter Japan’s luxury and lifestyle hotel market with three of its brands.

Thai-based Minor, with more than 550 hotels and resorts worldwide across eight brands, has teamed up with hotel operator Royal Holdings Co in a strategic partnership. 

The joint venture will be called Royal Minor Hotels Co., Ltd and will boost Minor Hotels’ presence in the Japanese market.

The joint venture will introduce three Minor Hotels brands: Anantara, Avani, and Tivoli, news hub Travel Mole reports.

The hotels will be developed through both management agreements and lease arrangements, with a target set of 21 hotels by 2035.

MINT and Royal have previously worked together to introduce the Sizzler brand in Japan.

Royal operates 43 Richmond Hotels across Japan through its subsidiary, RNT Hotels Co.

The new business will focus on key business and leisure destinations.

Underwater dining a true multi-cultural experience


Talk about multi-cultural.

How about a resort operated by a Thai-based hotel group in the Maldives with a restaurant showcasing Japanese-Peruvian cuisine led by a French chef?

Oh, and the Subsix restaurant at Niyama Private Islands Maldives is underwater just to give it another point of difference.

Subsix, named for its spectacular setting 500 metres out to sea and six metres below the surface, has hosted a series of novel experiences, from champagne breakfasts to midnight glow parties, since its launch over a decade ago.

Surrounded by a wall of glass, sun-dappled corals, a rainbow of anemone and butterfly fish, and with the occasional reef shark swimming by, each minute underwater is magical, a truly once-in-a-lifetime experience.

Subsix has just launched a new Nikkei fusion tasting menu that marries "Japanese tradition and precision with Peruvian boldness and artistry".

The five courses showcase local seafood with dishes that include scallop ceviche; wahoo tartare with swirls of avocado and a hint of spice; and buttery cod with crisp asparagus.

The menu has been crafted by executive chef Thierry Vergnault, who trained at the Four Seasons Hotel George V in Paris.

“With a setting as extraordinary as Subsix, nothing less than an extraordinary menu will do”, says Vergnault. “It demands one that intrigues all five senses and excites the palate with every bite. And as with all our restaurants, we take great pride in showcasing fresh, quality ingredients straight from the beautiful waters that surround us.”

One to add to the bucket list, but there are nine restaurants and bars at Niyama in total.

The resort is operated by Bangkok-based Minor Hotels.

The residences open early next year and are being marketed as "a new benchmark for urban tourism in Brisbane".

Quirky Melbourne property The Jazz Corner Hotel has been snapped up by Minor Hotels, one of the world’s fastest growing hotel groups.

The character-filled hotel will continue to operate under its current name.

Value will be a key driver for hotel guests in 2024



Hotel guests will see getting value for money as one of their primary travel drivers for 2024, an industry insider predicts.

Extending work stays with play, and re-creating the comforts of home in-room, will also be major trends as rising living costs may take high-end or extended travel off the agenda for many, says Craig Hooley, Chief Operating Officer of Minor Hotels.

Hooley, whose responsibilities include Oaks Hotels, Resorts and Suites says that as a nation of committed travellers, the brand is noticing many Australians would rather adapt their travel plans than give them up altogether.

Savvy operators will tap into this mindset and adapt to guests’ changing travel preferences, not just by offering deals, but by incorporating added value through partnerships with aligned brands, offering accommodation options for larger groups who can share costs, or encouraging leisure stays to be added onto work trips to save on flight costs, says Hooley.

“Simple things such as a weekend staycation in your own city, a road trip to a regional destination, or a coastal escape with family and friends are the key ingredients to a happy getaway, which is all about taking a break from the rigamarole of everyday life - and feeling like you’re getting great value for money," he says.

Thai-based hotel group spreads its wings



The Thailand-based hotel group Minor Hotels is developing into a into a major international force.

Minor Hotels is an international hotel owner, operator, and investor currently with more than 540 hotels in operation in 56 countries under brands including Anantara, Avani, Oaks, Tivoli, NH Collection and NH Hotels.

Minor Hotels this week announced its arrival in the French capital with plans for a trio of four-star Paris hotels.

The group will launch the properties under its NH Hotels and NH Collection brands.

The hotels will be with the 207-key NH Paris Gare de l’Est (above) and the 103-key NH Opéra Paris Faubourg.

The third property has 80 rooms and will open as NH Paris Champs-Elysées. It will then be launched in 2025 as an NH Collection property following a renovation.

“We believe this is an amazing opportunity to grow with two of our brands in the second most-visited city in the world and home to the 2024 Olympics,” said Dillip Rajakarier, CEO of Minor Hotels.

The three Paris hotels will join Minor Hotels’ six properties across France in Marseille, Lyon, Toulouse and Nice.

Outside France, other recent openings from NH brands include NH Collection Milano CityLife in Italy, and NH Collection Frankfurt Spin Tower in Germany.

"Our team has been searching for the right opportunities in this key market for some time, so we are pleased to announce that, together with Swiss Life AM, Minor Hotels will arrive in Paris not with one but with three hotels," said Rajakarier.
