How cooking can help feed social cohesion

Food innovator Gilava Pour shares a guest post on how food can help change attitudes.

The term “social cohesion” has been everywhere lately. It’s in the news, in opinion pieces, and across government conversations. Everyone agrees it matters, but no one seems to agree on what it actually looks like.

Most of the discussion sits at a high level. Policy, national identity, frameworks. But it feels like we’re overcomplicating something that actually happens in much simpler ways.

I run a food brand called Exotic Bazaar. We make Middle Eastern meal bases for people who want something different for dinner but don’t know where to start.

And what we’re seeing is straightforward.

A lot of our customers have never cooked Middle Eastern food before. For some of them, their only exposure to the region has been through the news.

Now they’re cooking dishes from that same region at home. They’re eating it with their families, talking about it, and saving it as something they’ll cook again.

Not because they’re trying to learn about a culture. Not because they’re trying to be open minded. Just because it tasted good.

But that’s exactly where something shifts.

Because that’s not how we usually think about changing perceptions. We assume it happens through conversation, education, or big moments. From what I’m seeing, it’s much smaller than that. It’s repetition. It’s familiarity. It’s doing something enough times that it stops feeling foreign.

You don’t need to convince someone to be interested in a culture if they already enjoy it in their own life. That’s a very different starting point.

There’s a lot of talk right now about division, mistrust, and people feeling disconnected. Some of that is real. But at the same time, there are small, quiet moments happening every day that don’t get talked about.

Someone trying a dish they’ve never had before. A family adding it into their regular meals. A conversation that starts with “this is actually really good.”

That’s it.

Nothing dramatic, but it adds up.

I didn’t start Exotic Bazaar to play a role in social cohesion. I just wanted to make the food I grew up with easier for people to cook. But it’s made me realise that this is where a lot of real connection actually starts.

Not at a national level. At a personal one.

We can keep having big conversations about what kind of country we want to be. But it’s worth paying attention to what’s already happening in people’s homes.

Because that’s where unfamiliar cultures stop being “other” and start becoming part of everyday life.

Change of direction for Ballarat gourmet hotspot

It is all change at Vesta x Jigs, the signature dining room at Ballarat’s award-winning Hotel Canberra.

The restaurant has shifted focus to an a la carte offering as of this week, a move away from the previous six- or eight-course degustation menus celebrating 100% Victorian produce.

Executive chef Jigs Liwanag (ex Rockpool) has now adopted a contemporary a la carte menu from Wednesday to Saturdays in the dining room and bar.

“We wanted to broaden our offer to the Ballarat community,” said general manager Pete Dillon.

“We have been very focused on using 100% Victorian produce in our degustation-only menus, which has been exciting for our team, but we have to adapt to the changing demands of our customers.”

The menu will still feature local produce from small artisan producers but the kitchen is moving to a zero-waste philosophy.

“I love what Victoria has to offer with incredible produce and amazing culinary adventurers, but with an a la carte menu, I can be more creative and celebrate the very best of the seasons, if that has to come from a little further afield, like South Australian whiting or oysters from New South Wales," the chef says.

Playing to his Filipino heritage and drawing on his eight years of experience cooking on a private yacht, Liwanag is excited to flex his creative muscles in a different way.

“Every place I have visited has provided me a little inspiration," he says. "I can meld influences from Italy and China together in one dish, I can use recipes my mum and grandma gave me, and I can pay homage to the street food of the Philippines, all at the same time.”

So think dishes like ceviche of kingfish with pickled strawberry and citrus dressing ($20, top image) and duck, elderberry pickle, pea puree and blackberry jus ($30, second image). There is also a six-course "feed me" menu for $120.

A beverage list with a focus on artisan, craft and alternative wine varietals has been designed to match the restaurant offer, with a small "cellar only" list also available.

Vesta x Jigs and Bobbys Bar at Hotel Canberra is at 812 Macarthur Street, Ballarat Central, serving the new menu from Wednesday to Saturday from 6pm. Bookings are highly recommended.

Grande old Ballarat dame now a culinary hotspot

Pete Dillon used to be a marketing and communications specialist. Now he's sending out press releases about his own hotel and restaurants.

Dillon and his brother Paul took over the Hotel Canberra in Ballarat late last year and have gradually transformed the food offering with three different eateries on site.

Bobby's, a contemporary bar, showcasing 100% artisan, craft and small-batch beverages from across Victoria, along with grazing boards and nibbles, opened in late October. The Stables Café and Bar threw open its doors in November and now Vesta x Jigs restaurant is open.

The Stables is a seven-day licensed café incorporating 100-year-old heritage-listed stables, while Vesta x Jigs celebrates the growers, producers and artisans from all corners of Victoria, and sees chef Jigs Lawanag (ex Rockpool Melbourne) deliver a six-course degustation menu ($100pp) made up of 100% Victorian produce from Wednesday to Saturday.

"Our café is about 90% Victorian, but both Vesta x Jigs and Bobby's are 100% focused on food and beverage from every corner of Victoria," said chef Jigs.

"We have many friends on whose doors we have knocked, from the north east to the south west. Pete (GM Pete Dillon) has developed these relationships over decades and its so lovely to be able to call on these suppliers to grow our brand story."

Beverage pairings are offered alongside the constantly changing menu, that has influenced by cuisine from the chef's home country in the Philippines, as a well as Japan and Nordic cuisines.

“We have taken some time to build the offer for each part of the hotel as we go along,” says co-owner Paul Dillon.

“We want to continue to evolve and are doing some work on the outside and al fresco dining as well as some plans for minor renovations in our accommodation space.

Each addition adds another layer to this grand old dame and will continue that evolution with new additions later this year.” he said.

Bookings are open at Vesta x Jigs but space is limited. Find out more at www.hotelcanberra.au.

Melbourne Food & Wine Festival spreads its wings

The Melbourne Food & Wine Festival has expanded its offering with a 10-day regional program offering eating and drinking right across the state of Victoria.

The festival kicks off with The Village Feast, a two-day (November 19-20) festival in the Gippsland village of Thorpdale that will feature an opening night collaboration dinner taking the team from wine-bar favourite Embla to winery restaurant Hogget; a campfire degustation from Farmer’s Daughters chef Alejandro Saravia, plus his deli, serving an all Gippsland deli menu; pop-up food outlets from chefs including interstate talent such as Danielle Alvarez and Analiese Gregory.

There will also be a celebration of Gippsland milk with That’s Amore and Gippsland Jersey; cakes by Mali Bakes; pub favourites at Art Deco watering hole The Travellers Rest Hotel; and entertainment including Mia Wray, Grace Cummings and Dorsal Fins on the main stage curated by Always Live, a new state-wide celebration of contemporary live music supported by Visit Victoria.

Early bird tickets are $32 for adults with free entry for children aged 12 and under.

“We’re thrilled to be back in regional Victoria as we continue to celebrate 30 years of the Melbourne Food & Wine Festival,” says Anthea Loucas Bosha, CEO of Food + Drink Victoria, the not-for-profit parent company behind Melbourne Food & Wine Festival.

“This program highlights the extraordinary food and drink experiences that make Victoria the best place in the world to eat and drink [a huge, contentious and very parochial statement] from our two-day takeover of Thorpdale for the Village Feast, a series of one-off dining events in Ballarat, and taking our popular Crawl and Bite tours to Victoria’s High Country.”

Other events that are part of Melbourne Food & Wine Festival’s dedicated regional program include:

· Victoria’s High Country Crawl and Bite, taking intimate groups of food lovers between a handful of great venues at a time, stopping for a bite, drink or taste at each in villages including Beechworth, Bright and Rutherglen.

· Ballarat Unlocked, with the region’s best chefs at some of the city's historic buildings in a Festival dining series.

· Signature Escapes, a series of itineraries put together in concert with producers, restaurateurs and hoteliers to showcase the best of the regions.

Tickets go on sale from Friday at mfwf.com.au.

Ballarat to get an international brand hotel

Ballarat is set to hit the big time with a new internationally branded hotel unveiled for the Victorian regional city.

The planned Holiday Inn & Suites is part of IHG Hotels & Resorts expansion plans in conjunction with the Forte Group.

Holiday Inn & Suites Ballarat Goldfields is described as "one of the most striking hotels in regional Australia".

Designed by Hachem Architecture, the 110-room hotel is expected to open in 2024 and will be one of the region's premier business, leisure and MICE destinations, with 400sqm of flexible meeting space including a large ballroom, a 90-seat restaurant and bar, a day spa, gymnasium and outdoor pool.

IHG's Holiday Inn brand has undergone a transformation over the last 18 months with new designs to the forefront.

Holiday Inn Werribee, which opened last week, is a case in point.

Abhijay Sandilya, IHG's VP of Development for Japan, Australasia and Japan, said: “Holiday Inn has made its mark as one of Australasia's fasted growing hotel brands, and we are thrilled to be adding this state-of-the-art designed property to the Holiday Inn family.

“We have been steadily growing IHG's presence in regional Victoria and Holiday Inn & Suites Ballarat Goldfields will complement Holiday Inn & Suites Werribee  along with Holiday Inns in other great locations like Geelong, Richmond, Ringwood, Wagga Wagga and Melbourne's Bourke Street Mall.”
